Cauliflower Tortillas

Ingredients

  • 1 Medium size cauliflower
  • 2 Large Eggs (replace with cheese incase u dont eat eggs)
  • 1/4 cup finely chopped cilantro/any herbs which you like
  • 1 tsp Lemon juice
  • 1 tsp Salt (To taste)
  • 1 tsp Pepper (To taste)
  • 1 tsp Garlic Powder (To taste)
  • 1 tsp Turmeric Powder (if you like it, i just love it)
  • 1 tsp Paprika Powder (To taste)

Instructions

  1. Preheat the oven to 375 degree F and prepare baking try with parchment paper.

  2. Wash cauliflower and puree it finely in food processor, until you get smooth mixture.

  3. Microwave cauliflower in microwave for 4 mins in microwave safe covered bowl, keeping some space for steam.

  4. Now squeeze out as much liquid as possible out of the cauliflower mixture.

  5. In separate bowl, whisk eggs, add cauliflower, cilantro, herbs, salt, lemon juice and pepper until mixture is blended together (it is best to use your hands)

  6. Make small balls of mixture and try to make small tortillas with hand on parchment paper .

    If you are not able to use hands, you can use plastic sheet over dough and press with hands.

  7. Bake one side for 10 mins and other for another 5 mins. 

  8. Based on your oven, the time may vary so cook until it becomes golden brown
